Vegan meatballs

Ever wanted a quick delicious meatballs to serve for your lunch, dinner or maybe as a snack? And want it to be healthy as possible? This mouthwatering vegan meatball recipe is inspired by VeggieRose which you can eat alone with your marinara sauce or serve over with a pasta, whichever you preferred. Enjoy


  • ½ chopped red onion
  • Chopped parsley
  • Black pepper to taste
  • Salt to taste
  • ¼ cup chopped pecans
  • 2 cup lentils
  • 2 ½ tsp garlic powder
  • 2 tsp onion powder
  • 1 tbsp nutritional yeast
  • 1 tsp dry basil
  • ½ tsp dried oregano
  • chopped mushrooms you prefer (shitake/Portobello)
  • 15 crushed ritz crackers
  • Oil for frying
  • Flour


STEP 1:  In a nonstick pan add oil and put onion in a medium high heat. Saute until slightly soft, then add mushroom and season it with a pinch of salt and pepper to taste, cook until it is lightly browned.

STEP 2: Meanwhile, Cook 2 cups of lentils on a stovetop using 3 cups of liquid water Be sure to use a large enough saucepan as the lentils will double or triple in size. Bring to a boil, cover tightly, reduce heat and simmer until they are tender.

STEP 3: Place cook lentils into a large mixing bowl and add the mushroom and onion mixture, then add all the remaining ingredients except for flour. Mix well lightly so it sticks together. Then form the mixture into a heaping spoonful balls and put flour and roll it all over the balls. Fry in oil until cooked in golden brown.    

STEP 4: Serve with or without marinara sauce and pasta, ENJOY.
