If you’re ever craving for a quesadilla without any types of meat but still taste as good? Here is the recipe of a Fully Loaded Vegetarian quesadilla, an alternative to your usual quesadillas
- 2 tablespoons of butter
- ½ cup chopped red onion
- 2 cloves of garlic
- ½ cup chopped red bell pepper
- 1 16 ounce of drained canned Beans (Kidney, cannellini, black)
- ½ cup of spinach
- ½ cup of mushrooms
- 1 & 1/4 cups of shredded cheese
- 1 cup of frozen corn
- ½ cup of salsa
- 6 (9) tortilla shells
STEP 1: In a large nonstick pan, fry onions and garlic with knob of butter over medium to medium high heat. After a while, add and fry mushrooms for a minute then add mashed kidney beans, corn and salsa. Stir and mix with salt. Once hot, remove vegetable mixtures from pan and put into separate container.
STEP 2: Clean the pan out and return to medium heat, add another knob of butter and let it melt into the pan, afterwards place the tortilla. Spin the tortilla to spread butter all over it. Sprinkle 1/4 cup of cheese evenly over tortilla, and layer ½ of your vegetable mixture over the cheese or less depending on how many quesadillas you’re making. Sprinkle another 1/4 cup of cheese on the vegetables, and top it off with a second tortilla, press down lightly so the quesadilla sticks together. Cook until golden on both sides, for approximately 2 to 3 minutes per side.
STEP 3: Remove quesadilla from pan, and repeat with remaining ingredients. Cut each quesadilla into your liking, Serve hot and enjoy delicious quesadillas.
